My New Years resolution is to eat more veggies and this salad is the perfect way to get in some extra vegetables and protein in a way that is delicious and nutritious. This is a great addition to a chicken or fish main dish or it is good to eat alone for lunch or dinner.
1 small can Chickpeas (garbanzo beans), drained and rinsed
1/2 of a large red bell pepper, diced
1/4 of an English cucumber, diced
1 small tomato, diced
1/2 of a small red onion, diced
2T cilantro, fine chopped
The juice of 1 lemon (don’t forget to remove the seeds)
As much or as little salt as you want
Combine all of the ingredients and refrigerate overnight. Enjoy!
Alternative – this can also be used as a type of salsa for your tortilla chips.
